MY OLD LOCAL ROTINI PASTA RECIPE


Hey sweet friends. Thanks for your patience with me. I was supposed to post this recipe a few days ago but never got around to it until now. This is an amazing recipe that my ethnic, local taste-bud friends will love. It's delicious and I enjoyed it.

Ingredients:

-  A box of rotini pasta (I used the Walmart brand but anyone you have will work)
- 4 fresh tomatoes
- 1/2 an Onion ball
- A medium sized habanero pepper
- a teaspoon of Nigerian dried crayfish
- a teaspoon of salt
- 1 1/2 teaspoons of Knorr beef bouillon
- 1/2 of Nigerian Palm oil
- A tin of tomato paste
- A can of black beans
- A whole dried catfish (you can only find this at an international grocery store/market)
- a fresh clove of garlic
-1 1/2 cups of beef stock
- Water


Preparation:
In a hot pot, pour your palm oil and let sit for a about 2-3 mins on medium high heat.
Add your chopped onions and garlic. Stir until the onion is translucent.
Proceed to add your chopped tomatoes and stir lightly for about 4 mins. Until tomatoes are soft and look stewed.
Proceed to add your chopped Habanero pepper and crayfish. Stir lightly.
Add your dried catfish(pre-soaked in in hot water, deboned and shredded into tiny bit size) stir.
Open your can of tomato paste and add to the mixture. Stir until all ingredients are one unified beauty.
Then add your Knorr beef bouillon flavor, salt and stir. Let cook for about 5 minutes
Then open your can of black beans, drain the juice and rinse with clean water and then add to the pot of beautiful deliciousness. At this time, your kitchen is already smelling like a palace of ethnic cuisine.
Add your beef stock and cook until the pot of deliciousness is boiling and a cup of water. Then add your rotini pasta. Mix it with ingredients. Stir until all ingredients in pot combine completely. Make sure the juice is about an inch above the level of pasta. Cook covered until pasta is soft. This should take about 15 mins.
Turn off stove and let sit to cool and then enjoy!
